Translating to “melted cheese,“ queso fundido is a classic Mexican party appetizer typically made of two components: bubbling-hot cheese and savory spiced meat sauce. In our main-course riff, ground beef is loaded up with chili powder, garlic, and cumin and served with tender cilantro cauliflower “rice.“ A pool of molten queso—scratch-made with cream cheese, cheddar, Monterey Jack, and roasted green chiles—is at the ready for drizzling and dunking. Spicy roasted tomato salsa ties it all together.

Ingredients: ground beef, riced cauliflower, heavy cream, cream cheese (pasteurized milk and cream, cheese culture, salt, guar gum, carob bean gum, xanthan gum), shredded cheddar cheese (pasteurized milk, cheese cultures, salt, enzymes, annatto vegetable color, anti-caking agent (potato starch, powdered cellulose, corn starch, natamycin)), shredded monterey jack cheese (pasteurized milk, cheese cultures, salt, enzymes, anti-caking agent (potato starch, powdered cellulose, natamycin)), diced green chiles (green chile peppers, water, salt, citric acid, calcium chloride), concentrated crushed tomatoes (tomatoes, salt), onions, olive pomace oil, unsalted butter (pasteurized cream, natural flavorings), chili powder (chili pepper, spices, salt, garlic powder), paprika (paprika and silicon dioxide (added to make free flowing)), garlic, cilantro, granulated garlic, sea salt, cayenne pepper, cumin
