Chipotle Roasted Salmon
with Salsa Verde Rice, Cumin-Roasted Yellow Squash & Chimichurri Crema

Bursting with flavor, this chipotle-marinated roasted salmon is served atop tomatillo salsa verde rice with aromatic cilantro. On the side is tender, cumin-roasted yellow squash with a savory roasted tomato sofrito topping. Drizzle a bright, spicy chimichurri crema over any (or all) of the components to ensure your taste buds will be tingling.
These tender center-cut salmon fillets are as versatile as they are delicious. They’re seasoned with garlic, onion, sea salt, and black pepper, pan-seared, and then roasted to flaky perfection.
