Chipotle-Spiced Potato & Pepper Bowl

with Ranchero Beans, Crema & Crushed Tostadas

Chipotle-Spiced Potato & Pepper Bowl
Vegetarian
Fiber Filled

Loaded with spice—both the aromatically complex and fiery varieties—this veggie-centric ode to rustic Mexican-style comfort food is satisfying in all of the right ways. The main course of paprika-chipotle potatoes gets covered in cheddar, then topped with roasted fajita veggies and pickled jalapeños for heat. Ranchero-style black beans bring more heft to the plate, and extra toppings of crispy crushed tostadas and cooling chipotle crema make mealtime customization a breeze.
