Chorizo & Poblano Chili Cheese Macaroni

Deeply flavorful chorizo sausage is sautéed and stirred into our black bean chili that’s simmered with poblanos, onions, and fire-roasted tomatoes. Blanketing the chili is a jalapeño-laced cheese sauce, made luscious with sharp cheddar, Monterey Jack, and a splash of heavy cream. It’s all ladled over elbow macaroni and served with smoky paprika cauliflower with roasted red peppers.
