Goat Cheese & Sweet Potato Quinoa

with Corn & Pepper Succotash

Goat Cheese & Sweet Potato Quinoa
Vegetarian

Our veggie-packed warm quinoa balances sweet and savory flavors to perfection. We mix in wilted kale, roasted sweet potatoes, and sauteed fennel, then add golden raisins and a touch of orange juice to highlight the sweetness. The quinoa is topped with toasted almonds for crunch and crumbled goat cheese for a creamy, tangy finish. On the side is summer succotash made with corn, bell peppers, and green beans tossed in luscious chive butter.
