Apple Mustard Pork Chop
with Sweet Potato Mash & Brussels Sprouts

This high-protein dish is the perfect balance of sweet and savory! We start by brining the pork chop and marinating it in sage and rosemary. We then grill it and place it over a sweet potato mash that’s made creamy from whole milk and cream cheese. On the side, shredded Brussels sprouts are tossed in garlic, onion, leeks and olive oil before roasting. The sauce served with this dish is made from gala apples cooked down with coconut sugar until softened, then combined with whole grain mustard for a match of sweet and tangy that pairs perfectly with pork.
