Indian Butter Tofu, Lentils & Rice
with Curry-Spiced Spinach & Potatoes

Fragrant curried rice and lentils with tangy tomato chutney makes a hearty bed for tender tofu marinated in yogurt and garam masala spices. A cascade of buttery spiced tomato sauce and a sprinkle of cilantro ties it all together. Aloo palak—spinach and potatoes seasoned with curry powder, cumin, and fenugreek—is the perfect side for this tasty vegetarian dinner.
