Jackfruit Carnitas | Ready To Eat Meal
with Charra Beans & Salsa Verde

It’s hard to believe this dish is completely vegan. That's because the roasted jackfruit has a remarkable resemblance to the pulled pork of traditional carnitas. Here, the tropical fruit is cooked with garlic and Mexican spices, then served over wild rice combined with tomato and poblano. As a riff on refried beans, pinto beans are folded into a creamy, spicy base of caramelized onion, tomato paste, chiles, and cumin.
Ingredients: jackfruit, pinto beans (prepared pinto beans, water, salt, calcium chloride (firming agent), calcium disodium edta (promotes color retention), diced green chiles (green chile peppers, water, salt, citric acid, calcium chloride), wild rice blend, poblano peppers, tomatoes, garlic, onions, olive oil, cilantro, tomato paste, lime juice concentrate, sea salt, apple cider vinegar, granulated onion, cumin, ancho chile powder, chili powder, coriander, coconut sugar

MICROWAVE
- Remove meal sleeve and pierce clear plastic film. 2. Remove cup of salsa verde. 3. Microwave meal on HIGH for 2 minutes. If needed, heat an additional 30 seconds or until desired temperature is reached 4. Carefully remove meal and let stand 2 minutes. 5. Remove film, plate meal and enjoy!
OVEN
- Preheat oven to 375°F. 2. Remove meal sleeve and clear plastic film. Set aside cup of salsa verde; place 2 oz of water into empty compartment. 3. Place tray on an oven safe baking sheet; position in the center of the oven and heat for 5 minutes. 4. Check temperature. If needed, heat for an additional 2 minutes or until desired temperature is reached. 5. Carefully remove meal, plate and enjoy!
