Slow-roasted beef gets a kick from dried chiles in this classic Mexican-style dish. We slow roast beef shoulder until meltingly tender, then toss it with a smoky red chile sauce. Spiced brown rice studded with poblano peppers and topped with a colorful blend of fajita peppers soak it all up. Alongside are roasted zucchini with chili flakes, and a cilantro-lime crema for cool, creamy contrast.
