Pimento Verde Pork Chop
with Poblano-Corn Medley, Ranchero Black Beans & Roasted Zucchini

A medley of sweet roasted corn, onions, and poblano peppers makes a flavorful base for tender pork chops crowned with a creamy pimento verde topping. The pork is marinated in cumin and ancho chile powder, then grilled and served over the roasted vegetables. A savory mix of roasted poblanos, cream cheese, and cheddar to make the irresistible pimento verde that melts over the top. Alongside are ranchero-style black beans with fire roasted tomatoes, and roasted spiced zucchini.
