Tonight’s mashed potatoes are inspired by the flavors of vichyssoise, a leek and potato soup popular in French cuisine. Steamy Yukon Golds are mashed with roasted leeks, cream cheese, and sour cream, and then served under a whole chicken breast that’s seasoned with Italian herbs and fire-grilled. On the side, there’s tender sautéed corn and zucchini, topped with a silky compound butter made with Parmesan, parsley, and chives.

HEATING OPTION 2 - CONVENTIONAL OVEN

  1. Adjust rack to middle position and preheat oven to 375°F. 2. Remove outer packaging and plastic film. 3. Place tray on a baking sheet and bake for 7 minutes. If needed, continue to bake for 2-4 more minutes or until desired temperature is reached. 4. Transfer contents to a plate and enjoy!
