Salsa Shredded Chicken Thighs

Roasted spiced sweet potatoes with red bell peppers and cilantro are the foundation for this Mexican-inspired dish. The sweet potatoes are topped with shredded chicken thighs marinated in taco seasonings, then mixed with a red tomato salsa with jalapeños and lime juice. The chicken is then finished with more salsa, cheddar and Jack cheese, and scallions. A veggie medley of zucchini, black beans, corn, bell peppers, and onions pairs perfectly with the main course.
