Spicy Chipotle Beef Cavatappi

Our chefs put a Mexican spin on traditional beef ragu by seasoning it with chipotle and ancho chiles, smoked paprika, cumin, coriander, and oregano. The smoky, spicy sauce adds tons of flavor to our cauliflower cavatappi pasta. It’s all topped with roasted poblano peppers, gooey cheese, and sliced scallions. On the side are veggies that spotlight those bold, vibrant spices: carrots with chili and garlic, and cauliflower with earthy cumin and cilantro.
